Dating back thousands of years from ancient Roman times. It is made in accordance with strict regulations, cured with salt it has a creamy white with a firm texture and grainy surface. Aged for 5-8 months ideal for grating has a salty unique flavour.

Pecorino Fioretto del Monte is made with selected sheep's milk and aged a minimum of two months. Its peculiarity is found in the intensity of its taste and scent. The paste is compact, white tending towards straw yellow as it matures. The best way to appreciate its flavour is to eat it on its own, if you're looking for an authentic pecorino with a distinctive taste.
