This DOP (PDO) cheese is aged for three months. It is a pale-yellow cheese, with a mild and sweet. It can be used on a platter or melted for a pasta sauce or a quiche filling. Montasio is used to make frico, a dish traditionally prepares in Alpine homes. It is basically cheese cooked in a hot pan until it is crunchy and full of flavor.
