Description
From Campania, Italy, another specialty of the company Carbone is chicory preserved. The Carbone Company engages with the cultivation of the chicory in the fields of the Sele plain. Chicory is harvested still tender, then stewed and preserved in oil seasoned with garlic and chilli to make it ready to eat. Used as a side dish sautéed in a pan, or to stuff pastries and also excellent as a topping for pizzas.

Known as Friarielli, this product is well adapted to both winter and summer growing seasons for spring and fall harvests, its bitter flavour is complemented by nutty notes, a great source of vitamins A, C, and K, as well as iron, folate, and manganese. From the Neapolitan tradition, the florets with the most tender leaves are seasoned with oil, garlic and chilli. First used only in Campania, Friarielli today have become a must. The “Sasicc e friariell” (sausage and Friarielli) pizza is known all over the world. The product can be used in various recipes, excellent for seasoning pasta and ideal as a side dish. A firm Italian favorite is sauteed with sausage served with roasted Potatoes.
